Coconut Peanut Butter Balls
If there’s one thing you’ll always find in our kitchen, it’s a batch of Peanut Butter Balls. These little bites are more than just a treat — they’re a family favorite, packed with wholesome ingredients, and so easy to make that my girls love helping out (especially when it comes to taste-testing!).
We make these 1–3 times a week, and every batch disappears faster than I’d like to admit. They’re perfect as a quick breakfast-on-the-go, a school lunchbox addition, that little pick-me-up with your afternoon coffee, or your treat after a long day. Plus, they’re made entirely with pantry staples — no baking required!

Ingredients
2 cups fresh-ground peanut butter (or your favorite store-bought)
2 cups oats
1 ½ cups unsweetened coconut flakes
⅓–½ cup raw honey (adjust to taste)
½ tablespoon ground cinnamon
1 teaspoon salt
2 tablespoons flaxseed
Directions
Combine: In a large bowl, mix all ingredients together until well blended.
Chill: Place the mixture in the refrigerator for at least 1 hour (overnight if possible). This makes rolling easier.
Roll: Once firm, scoop and roll into bite-sized balls.
Enjoy! Store them in an airtight container in the fridge — if they last that long!
