Homemade Basil Pesto

Pesto is one of my go-to summer recipes—it’s fresh, flavorful, and surprisingly easy to make. Even better? My little ones loved helping out, especially when it came to taste testing!

Here’s how I made this simple and delicious pesto:

Ingredients:

  • A big bunch of fresh basil (I used about 2–3 cups)

  • 2 cups cashews (you can sub with pine nuts or almonds)

  • 2 cups grated Parmesan cheese (omit if vegan!)

  • ½ cup olive oil (I started with ¼ cup and added more as needed—I like mine on the less oily side, but adjust to your taste)

  • 1–2 cloves garlic

  • Juice of 1–2 lemons (depending on how zesty you like it)

  • Salt and pepper to taste

  • ¼–½ cup water (to help with blending and texture)

Instructions:

Just toss everything into a food processor or high-powered blender and blend until smooth! Taste test as you go and adjust the salt, lemon juice, or consistency to your liking.

That’s it—done in minutes!

This pesto is so versatile. Use it on pasta, sandwiches, pizza, grilled veggies, or as a dip. Make a big batch and store it in the fridge or freezer for quick flavor boosts all week long.
