Spinach Dip
Ingredients:
1 (12 oz) carton low-fat cottage cheese
1 (10 oz) package chopped spinach, thawed and drained
1 cup fat-free mayonnaise
¼ cup dry vegetable soup mix
2 tsp grated onion
1 tsp lemon juice
1 (8 oz) can chopped water chestnuts, drained
Directions:
Blend the cottage cheese in a food processor or blender until smooth.
Transfer to a medium bowl and set aside.
Press the spinach between paper towels until just slightly moist.
Add the spinach and remaining ingredients to the cottage cheese.
Stir until everything is well combined.
Cover and refrigerate for about 3 hours to let the flavors come together.
