Halloween Monster Cookie Bars Recipe

Prep time: 10–15 minutes
Bake time: Approximately 14–20 minutes
Total time: 30–35 minutes, plus cooling
Yield: 24 cookie bars
Oven temperature: 350°F
Pan size: 9×13 inches

Ingredients

  • 115g (½ cup) unsalted butter, melted

  • 150g (¾ cup packed) brown sugar

  • 50g (¼ cup) granulated sugar

  • 1 large egg

  • 2 teaspoons vanilla extract

  • 220g (1¾ cups) all-purpose flour

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 150g (about ¾ cup) chocolate chips + peanut butter chips

  • Halloween sprinkles

  • Candy eyeballs, assorted sizes

Instructions

  • Preheat the oven. Preheat to 350°F and line a 9×13-inch baking pan with parchment paper.

  • Mix the wet ingredients. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the egg and vanilla extract, mixing until combined.

  • Add the dry ingredients. Stir in the flour, baking soda, and salt until a soft cookie dough forms. Be careful not to overmix.

  • Fold in the chocolate + peanut butter chips. Gently stir until evenly distributed throughout the dough.

  • Press into the pan. Transfer the dough into your prepared baking pan and press evenly into the corners.

  • Let the Halloween decorating begin! Sprinkle the top generously with Halloween sprinkles and scatter candy eyeballs across the dough. Let the kiddos get creative! Every little monster can have its own personality.

  • Bake. Bake for approximately 14–20 minutes, checking early. The edges should be lightly golden and the center just set. Baking times will vary depending on your oven and the thickness of the bars.

  • Cool and slice. Allow the cookie bars to cool completely before cutting into 24 squares. They'll continue to firm up as they cool.

A little baking tip: For soft, chewy cookie bars, avoid overbaking. The center should be set but still tender. If your candy eyeballs are sensitive to heat, you can also add them after baking, securing them with a tiny dab of melted chocolate.

Making a Little Halloween Magic

My girlies have their Halloween party at school today, and I wanted to make something extra fun for them to bring and share with their friends.

Not something complicated or elaborate. Just something festive, delicious, and made with a whole lot of love.

Growing up, my mom was, and still is, the absolute best at bringing a holiday theme to life.

It didn't matter what holiday we were celebrating. She had a way of making it feel special. The little decorations, the seasonal treats, the excitement of preparing something together. She made ordinary moments feel like celebrations, and those are memories I've carried with me into adulthood.

Now that I'm a mom, I find myself wanting to create those same experiences for my own daughters.

Not because every holiday needs to be picture-perfect or every celebration needs to be extravagant, but because there's something beautiful about the little traditions we create together.

The things our children will someday remember.

A Kitchen Full of Sprinkles, Eyeballs, and Giggles

These Halloween monster cookie bars were exactly what I was hoping for.

Simple enough to throw together in the morning, delicious enough for everyone to enjoy, and just festive enough to make two little girls very excited.

The best part wasn't even the baking.

It was watching my daughters decorate them.

Tiny hands carefully placing candy eyeballs across the cookie dough. Halloween sprinkles scattered everywhere. Little giggles as they decided where each eyeball should go.

Some monsters had one eye. Others had several. There was absolutely no rhyme or reason to their creations, which made them even better.

And really, isn't that the magic of baking with kids?

It's not about everything looking perfect.

It's about inviting them into the experience, letting them create, and enjoying the beautiful chaos along the way.

The Beauty of Little Traditions

The older I get, the more I appreciate how much love can live inside the simplest moments.

A recipe passed down through generations. A kitchen filled with laughter. A holiday tradition that becomes something our children look forward to year after year.

I think about my own childhood and the way my mom made holidays feel so exciting. I don't remember every gift or every decoration, but I remember how those moments felt.

The anticipation. The togetherness. The joy.

And now, standing in my own kitchen with my daughters, I get to experience that magic from an entirely different perspective.

What a gift it is to create the memories that will someday become their childhood stories.

These cookie bars may be a simple Halloween treat, but to me, they're another little piece of the life we're creating together.

One messy, sprinkle-covered, love-filled memory at a time.

A Sweet Treat for Your Next Halloween Celebration

Whether you're baking for a classroom Halloween party, a neighborhood gathering, or simply a cozy afternoon at home, these monster cookie bars are such a fun way to celebrate the season.

They're easy to make, easy to share, and even more fun when you invite your little ones to help decorate.

So grab the sprinkles, scatter a few silly eyeballs, turn on some Halloween music, and make a little magic in your kitchen.

Because sometimes the sweetest part of a recipe has nothing to do with the ingredients.

It's the memories we make along the way.

Happy Halloween from our kitchen to yours! 🎃
